Waffle Wednesday


Bawstun Cream Wahffles
Let me see if I can translate what I was going to say into ChowdaHead talk:
Mawtha a'Gawd! What we gaht ovah heah are some wicked good Boston Cream Pie waffles. Dese aunt gahdidge. Theys so good, its like some guy from Hahvuhd made em up or whahevuh. Worth checkin out when ya nat woshin ya cahr or duin yahd wuck.


Vanilla malted waffles

2 C. all-purpose flour

1 Tbs. baking powder

1/2 tsp. salt

1 Tbs. sugar

2 Tbs. vanilla malted milk powder

1 tsp. vanilla

4 eggs, separated

1/2 C. vegetable oil

1 3/4 C. milk


Pastry cream custard

3 tablespoons cornstarch

1/3 cup sugar

1 cup milk

3 large eggs

1/2 cup heavy cream

1/4 teaspoon salt

1 vanilla bean, split lengthwise

3 tablespoons unsalted butter


Chocolate glaze

6 ounces fine-quality bittersweet chocolate (not unsweetened), broken into pieces

3 tablespoons water

2 tablespoons unsalted butter

1 1/2 tablespoons light corn syrup

1/4 teaspoon salt


For the pastry cream custard

In a saucepan whisk together the cornstarch, the sugar, and the milk, add the eggs, the cream, and the salt, and whisk the mixture until it is smooth. Scrape the seeds from the vanilla bean, reserving the pod for another use, add them to the cream mixture, and bring the custard to a boil over moderate heat, whisking constantly. Boil the custard, whisking, for 2 minutes, remove the pan from the heat, and whisk in the butter. Let the custard cool completely, whisking occasionally.

For chocolate glaze

In a metal bowl set over a saucepan of barely simmering water melt the chocolate with the water, the butter, the corn syrup, and the salt, stirring until glaze is smooth, and remove the bowl from the pan.

For the waffles

Preheat greased Belgian waffle iron. Combine flour, baking powder, salt, sugar, and malted milk powder. In a separate bowl, beat egg yolks until thick and lemon colored. Add vanilla, vegetable oil, and milk. Stir into flour mixture until smooth, but do not overbeat. Beat egg whites until peaked but not dry. Fold gently into batter. Bake waffles using Belgian waffle iron instructions.

Assemble

Be creative! Stack ‘em like an actual Boston Cream Pie- waffle, pastry cream custard, waffle, topped with oozing chocolate. Or just goop it all on for a hot mess! Who has time for aesthetics? Your taste buds will worship you for a nibble this good. However, your ass might not be so welcoming.

Waffle Wednesday

Waffles
with
CreamCheeseIcing


Cream cheese icing
4 ounces (115 g) cream cheese
1 tablespoon salted butter, at room temperature
1/2 teaspoon vanilla extract
1 tablespoon freshly squeezed lemon juice
2/3 cup (90 g) powdered sugar, sifted
4 or 5 teaspoons water
Red velvet waffles
1 1/2 cups Cake Flour
1/4 cup Unsweetened Cocoa
1 Tablespoon Sugar
1/2 Teaspoon Salt
2 Teaspoons Baking Powder
1 Tablespoon Red Food Coloring
1 Teaspoon Cider or White Balsamic Vinegar
1 Teaspoon Vanilla Extract
6 Tablespoons Melted Butter
1 1/2 Cups Milk
3 Eggs, Separated
For cream cheese icing:
In a stand mixer fitted with the paddle attachment, beat together the cream cheese and 1 tablespoon butter on high speed until smooth. Beat in the 1/2 teaspoon vanilla and the lemon juice, then gradually add the powdered sugar, beating on high speed until smooth. Add the 4 teaspoons water; the icing should be pourable. If necessary, add 1 more teaspoon water.
For red velvet waffles
Sift together the dry ingredients into a large bowl, In another bowl whisk together the Egg Yolks, Food Coloring, Vanilla, Milk, Melted Butter and Vinegar. With a few brisk strokes mix the Egg mixture to the dry ingredients (the mixture should have small lumps and pebbles) Beat the egg whites until stiff but not dry and with a spatula incorporate them into the batter without losing their loft. Cook according to the manufacturers instructions in a waffle iron. Serve with warm drizzled cream cheese icing.

Muse of the Month



Carole Lombard

Carole Lombard was the highest-paid star in Hollywood in the late 1930s.

Lombard had an affair with Clark Gable. Both were married at the time. Lomard to William Powell and Gable to oil heiress Rhea Langham.

MGM head Louis B. Mayer gave Gable enough money to settle a divorce agreement with Langham and marry Lombard.

Gable proposed to Lombard in a telephone booth at the Brown Derby and pretty much eloped in Arizona a year later. The only person in attendance was Gable's press agent.

When the US entered WWII at the end of 1941, Lombard traveled to her home state of Indiana for a war bond rally with her mother, Bess Peters, and Clark Gable's press agent Otto Winkler. After raising over $2 million in defense bonds, Lombard addressed her fans, saying: "Before I say goodbye to you all, come on and join me in a big cheer! V for Victory!" On January 16, 1942, Lombard, her mother, and Winkler boarded an airplane to return to California. After refueling in Las Vegas, the plane took off and 23 minutes later, crashed into "Double Up Peak" near Mount Potosi. All 22 aboard, including 15 army servicemen, were killed instantly.

Shortly after her death at the age of 33, Gable (who was inconsolable and devastated by her loss) joined the US Army Air Forces. After officers training, Gable headed a six-man motion picture unit attached to a B-17 bomb groupin England to film aerial gunners in combat, flying five missions himself. Gable attended the launch of the Liberty ship SS Carole Lombard, named in her honor, on January 15, 1944.

In addition to all this information. She looks identical to my mother but with blonde hair. And I mean IDENTICAL!

Waffle Wednesday








LEMON
POPPY SEED
WAFFLES
with
BLUEBERRY SAUCE






Blueberry sauce
  • 1 pound frozen blueberries, thawed, undrained
  • 1/2 cup plus 2 tablespoons apple juice
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice

Lemon-poppy seed waffles
  • 1 1/2 cups all purpose flour
  • 6 tablespoons sugar
  • 2 tablespoons poppy seeds
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 tablespoon grated lemon peel

For blueberry sauce:
Bring blueberries, 1/2 cup apple juice and sugar to boil in heavy medium saucepan. Simmer over medium heat until reduced to 2 cups, about 15 minutes. Dissolve 1 tablespoon cornstarch in remaining 2 tablespoons apple juice and add to blueberry mixture. Add lemon juice. Bring to boil, stirring constantly; simmer until thick, about 1 minute. Cool slightly. (Can be made 2 days ahead. Cover and refrigerate. Rewarm over medium-low heat before serving.)


For lemon-poppy seed waffles:
Whisk first 6 ingredients in large bowl to blend. Whisk eggs, buttermilk, melted butter and lemon peel in small bowl to blend. Add buttermilk mixture all at once to flour mixture and whisk until just blended. Let mixture stand 15 minutes.

Preheat waffle iron according to manufacturer’s instructions. Spoon batter onto waffle iron. Cover and cook until golden and cooked through, about 7 minutes (cooking time will vary, depending on waffle iron). Repeat with remaining batter. Serve immediately with warm blueberry sauce.

Gift Wrapping













WASP 101

Ivy leagues, yachting, and a walk in closet loaded with every corduroy pant and every tweed blazer Brooks Brothers have ever manufactured are some of the many ingredients in the WASP lifestyle.
One cannot just become a WASP. Oh, no. One must be born with this oh so rich blue blood. However, that should not discourage you furthering your understanding of this prosperous way of life. To make it easy I have made a small list of things WASPs love!


Garden Brunches- where fellow WASPs, trust-fund babies, hedgies and others of the sort talk about recently purchased art pieces, stocks and summer house renovations. All the while sipping on Cristal Brut 1990 "Methuselah" (a cool $17,625 a bottle) and nibbling on beluga caviar blinis. Note: it is extremely important not to mention the obvious blow/vicodin addiction your friend's child has recently developed (to her face). This discussion is held till coffee and crumb cake is passed out.

Tasseled Loafers- a WASP is not a WASP without his or her mahogany colored loafers. The rules are lenient with females. Their loafers may be a range of colors. Beige, sand dune beige, latte beige, beige again- or even khaki if you want to be daring! Women get to have all the fun with colors. However, men must stick to the Law of the Loafers: dark rich brown with tassels. If you are a WASP, this goes without being said, tassels are what make the shoe. If you buy tassel-less loafers might as well write NOUVEAU RICHE on your butler's forehead!





Cocaine- every WASP has some on them or are a text away from someone that does. Everyone needs a little pick me up.




Poker Games- an evening loaded with good Scotch and Cohiba Esplendido cigars and buy-ins starting at $25,000. Cash isn't the only thing one can wager. Many options include: "one night with my wife", horses with stables included, car keys, mistresses, and promises to fulfill dares of gay activities.



Thank You Notes- the more monogramed the better.










Badminton- a perfect afternoon for a WASP? Playing co-ed badminton with siblings after a lovely lunch at the club house.







Fox Hunting- this sport makes one nostalgic of their childhood. Getting ready with their grandfather in the wee hours of the morning and riling up the hounds. Tis a dying sport within the WASP community.







Summering- WASPS don't vacation. They don't take trips. They yacht, they ski, and they summer. No frequent flyer miles are needed for they have their own jet, on their own landing strip, in their own back yard. And they don't take just a week off. They take the summer off. June, July and August are spent on a boat or at one of their abroad mansions.




Taxidermy Studies- a manly WASP has a study where he can relax, read, smoke his tobacco pipe, sit by the fire with his golden retriever by his feet and view the monstrous endangered animals mounted on his walls. The smell of rare books, rich leather, musty antique rugs and dried solid hide gets a WASPy man real loosened.
